Blast Freezing and Cold Storage Guide: Capacity, Pull-Down and Planning

Blast freezing is a process, not a storage function. Sizing it by warehouse volume is the most expensive mistake in frozen-food projects.

What blast freezing is

A high-duty freezing process that moves product through the critical zone quickly to preserve cell structure, texture and yield, using forced air, plate contact or cryogenic media.

Product pull-down time

Pull-down depends on entry temperature, product thickness, packaging, airflow and target core temperature. Specify the core temperature and the hours allowed — that pair drives the whole design.

Seafood freezing

Fish quality depends on speed from catch or harvest to frozen core. Plate freezers suit blocks; blast tunnels and IQF suit portions and shrimp.

Shrimp freezing

Shrimp is frequently IQF frozen, glazed and packed to export specification; freezing capacity must match landing peaks rather than annual averages.

Poultry and meat freezing

Carcass or parts freezing follows chilling. Throughput per shift, packaging and hygiene zoning determine tunnel or spiral selection.

Fruit and vegetable freezing

IQF lines with pre-cooling, blanching where relevant and fluidised-bed freezing dominate; product density and moisture drive belt loading.

Airflow, packaging and batch size

Packaging insulates. Cartoned product freezes far slower than exposed product, so packaging must be stated in the RFQ or capacity estimates will be wrong.
