Meat cold storage temperature and refrigeration requirements

Meat facilities carry three distinct refrigeration duties — carcass chilling, chilled holding and frozen storage — each with a different load profile. Combining them into one nominal cold room specification is a frequent cause of under-performance.

Refrigeration engineering considerations

Chilling duty vs. holding duty

Carcass chilling load peaks sharply after slaughter and then falls. Plant sizing must cover the peak; control strategy should avoid running the whole plant at peak all day.

Weight loss and humidity

Air velocity, humidity and coil temperature difference influence evaporative weight loss, which is a direct commercial cost in meat operations.

Hygiene and washdown

Panel finish, floor drainage and coil coatings are part of the refrigeration specification in meat plants.

Zoning

Separating chilled, freezing and dispatch zones reduces cross-infiltration and improves temperature stability.
