Vegetable cold storage temperature and pre-cooling requirements

Vegetables cover a very wide range of storage conditions, from near-freezing leafy produce to warm-stored crops that suffer chilling injury. Getting the zoning right is the single largest determinant of both losses and refrigeration cost.

Pre-cooling method

Vacuum cooling suits leafy crops, hydro-cooling suits dense produce, forced-air suits packed product. The choice drives the plant, not just the room.

Humidity control

Leafy produce requires very high relative humidity; coil selection and defrost strategy must reflect that.

Ethylene separation

Ethylene producers should not share a room with sensitive crops.

Mixed-commodity zoning

Multi-crop packhouses need multiple temperature zones rather than one compromise setpoint.
