Fish cold storage temperature and system requirements
Fish is one of the most temperature-sensitive commodities in the cold chain, and the refrigeration requirement is driven far more by pull-down and freezing duty than by holding load. Sizing a fish cold store around holding temperature alone is the most common cause of under-capacity in fisheries projects.

Refrigeration engineering considerations
Pull-down and freezing duty
Freezing capacity is defined by tonnes per batch, entering product temperature, target core temperature and the required freezing time. This duty is typically several times the holding load of the storage room it feeds.
Humidity and weight loss
Low relative humidity accelerates dehydration and weight loss in unwrapped product. Evaporator selection and temperature difference across the coil directly influence this.
Airflow and stacking
Uniform air distribution matters more in fish rooms than in most commodities because product is often stacked densely in boxes with limited internal air paths.
Doors and throughput
High-throughput fisheries dispatch doors add substantial infiltration load. Air curtains, vestibules and dock seals should be scoped from the start.
Power reliability
In fisheries markets with unstable grids, backup power and monitoring are part of the refrigeration specification, not an optional extra.
