Potato stores behave differently from most cold rooms: ventilation and humidity management matter as much as refrigeration, temperature depends on end use, and storing too cold causes sugar accumulation that ruins processing crops.

Respiration heat

The crop generates heat continuously; load calculation must include respiration, not just transmission and infiltration.

Condensation control

Uncontrolled condensation on the pile surface drives rot; humidity and air temperature differentials must be managed.

End-use temperature

Processing crops are stored warmer than table crops to avoid cold-induced sweetening — a commercial requirement, not a preference.
