Frozen food storage temperature and warehouse requirements
Frozen distribution facilities are dominated by throughput and dispatch, not by holding load. Door traffic, staging areas and truck loading are usually where temperature and energy performance are won or lost.
| Condition | Indicative temperature | Humidity | Engineering note |
|---|---|---|---|
| Frozen storage (general) | −18 to −25 °C | 90–95 % RH | −18 °C is the common baseline; colder for long-term or sensitive product. |
| Ice cream and sensitive frozen product | −25 to −30 °C | 90–95 % RH | Quality-driven rather than safety-driven. |
| Dispatch / staging area | −5 to +2 °C typical | n/a | Buffer zone limits excursions during loading. |
| Blast freezing (if freezing on site) | −30 to −40 °C air | n/a | Separate duty from storage. |
Values are indicative planning ranges used for early-stage refrigeration sizing and procurement. They do not replace product-specific food-safety, pharmaceutical, regulatory or customer requirements, which take precedence in every case. Confirm final conditions with your quality function and a qualified refrigeration engineer.
Refrigeration engineering considerations
Throughput over volume
Design around pallets in and out per day, not just pallet positions. Load peaks occur during receiving and dispatch windows.
Dispatch buffering
A tempered staging area or refrigerated dock substantially reduces excursions and infiltration into the main store.
Floor protection
Freezer floors require underfloor heating or ventilation to prevent frost heave; this is a structural requirement, not an option.
Automation
High-bay automated stores reduce door traffic and footprint but change the refrigeration, controls and power specification significantly.
