The four cold chain stages of a poultry processing project
1. Primary chilling
Air chilling, evaporative air chilling or immersion (spin) chilling sized to birds per hour, bringing carcass core to +4 °C or below inside food-safety time limits. The chilling method drives water uptake, yield, product claims and refrigeration duty.
2. Cut-up, deboning and chilled holding
Processing halls held at +8 to +12 °C for operator comfort and product safety, chilled buffer stores at 0 to +2 °C, and hygienic design that survives daily washdown and caustic cleaning cycles.
3. Freezing and frozen storage
Spiral or tunnel freezers for portions and value-added products, plate or blast freezing for bulk, and −18 to −25 °C storage sized in pallet positions with a seasonal and export-shipment buffer.
4. Dispatch and export logistics
Temperature-controlled dispatch docks, reefer loading with dock shelters, container pre-cooling and continuous logging for HACCP, halal or export-certification audits.
