Avocado import cold chain: temperature, atmosphere and ripening on arrival
Avocados are shipped mature-green and ripened near the market, so import handling is about holding fruit cool enough to slow ripening but warm enough to avoid chilling injury. UC Davis gives 5–13 °C for mature-green fruit depending on cultivar and duration, 2–4 °C for ripe fruit and 90–95% relative humidity. Long sea voyages often use controlled atmosphere; short land routes such as Mexico to the United States use refrigerated trucks. On arrival, ripening rooms with ethylene control decide whether fruit reaches buyers evenly ripe. ColdMatch helps importers specify storage and ripening infrastructure; it does not transport fruit.

ColdMatch Group is a sourcing and procurement platform for refrigeration and cold-chain infrastructure. It is not a carrier, importer of record, ripening operator or inspection body, and it does not quote freight or guarantee fruit condition. Holding conditions by fruit stage
Two UC Davis references give different ranges; the right set point depends on cultivar, maturity and how long the fruit will be held.
| Stage | Temperature (reference) | Atmosphere | Main risk |
|---|---|---|---|
| Mature-green, in transit or storage | 5–13 °C depending on cultivar and duration (UC Davis fact sheet); 3–7 °C for Fuerte and Hass (UC Davis storage table) | Controlled atmosphere listed as beneficial (2–5% O₂ + 3–10% CO₂ in the storage table) | Chilling injury if too cold; early softening if too warm or exposed to ethylene |
| Ripening at destination | Ripening-room programme set by the importer's specialist | Ethylene applied under control; ventilation to remove CO₂ | Uneven ripening, overheating from fruit respiration |
| Ripe, ready to sell | 2–4 °C (UC Davis fact sheet) | Air | Bruising and short remaining shelf life |
Relative humidity of 90–95% is given for avocados in the UC Davis fact sheet. Confirm settings for your cultivar and route with a postharvest specialist.
Corridor decision matrix
One row per verified corridor. Use it to decide what to confirm with your exporter, forwarder, postharvest or food-safety adviser and the competent authorities before you commit. Seasons and evidence carry their own label.
Mexico → United States
- Season
- Exports run year-round, with a peak from December to February (USDA FAS Avocado Annual). Official source
- Transport mode
- Refrigerated truck across the land border
- Temperature / specification to confirm
- Mature-green fruit 5–13 °C depending on cultivar and duration, 90–95% RH (UC Davis); confirm the set point with your specialist.
- Packaging
- Cartons on stable pallets; no mixing with ethylene-sensitive products.
- Transit risk
- Border dwell in warm weather; chilling injury if held too cold; early softening if too warm.
- Handoff questions
- Are orchards and packhouses enrolled in the APHIS-approved programme for this shipment?
- What trailer set point and logger interval apply from packhouse to receiver?
- Where and how long will the truck wait at the border?
Peru → Europe, United States, Asia
- Season
- The coastal Hass campaign runs roughly May to September (press report; confirm with exporters). Press report
- Transport mode
- Reefer container, often with controlled atmosphere
- Temperature / specification to confirm
- Mature-green holding band and controlled-atmosphere settings agreed per cultivar and voyage length (UC Davis gives 5–13 °C; storage table 3–7 °C for Hass).
- Packaging
- Cartons and pallets compatible with controlled-atmosphere containers.
- Transit risk
- Multi-week voyages; uneven ripening at destination; chilling injury visible only after ripening.
- Handoff questions
- Which oxygen and carbon dioxide settings will the container hold?
- Does the fruit arrive green or pre-conditioned, and who sets the ripening programme?
- Which arrival records will prove the set point was kept?

Two import patterns: land border and long sea voyage
Mexico supplied 89% of US avocado import volume and 92% of value in 2021, according to USDA APHIS, mostly by refrigerated truck. Hass avocados enter the US from approved Mexican states under an APHIS systems approach; the 2016 rule extended entry to all US states. Peru exported 769,774 tonnes of avocados in 2025 (PROMPERÚ, SUNAT data), mainly by reefer container over voyages of several weeks, where controlled atmosphere and steady temperature matter more.
Ethylene and mixed loads
Avocados produce and respond to ethylene. Do not mix them with ethylene-sensitive products in the same room or container, and keep ripening rooms separate from holding rooms.
- Agree whether fruit arrives pre-conditioned or fully green.
- Plan ripening capacity for the arrival programme, not average weekly volume.
- Monitor CO₂ in ripening rooms and ventilate as your specialist specifies.
Receipt, inspection and port dwell
Check pulp temperature, firmness and logger records on arrival, and move fruit into a cold room quickly. Long dwell at a port or border crossing in warm weather starts ripening early and shortens the sales window.
Shelf-life risk and claims
Common disputes involve chilling injury (internal browning that may appear only after ripening), uneven ripening and decay. Keep pulp readings, logger files, ripening-room records and photos. Notice periods depend on the transport convention and contract: three days for non-apparent damage under the Hague-Visby Rules (sea) and seven days, excluding Sundays and public holidays, under the CMR (road). Take legal advice for a specific claim.
Where ColdMatch fits
ColdMatch is free for buyers. Its team reviews cold-storage, controlled-atmosphere and ripening-room requests of USD 250,000 and above, contacts suitable suppliers on the buyer's behalf and presents organised responses. There is no direct buyer-to-supplier contact.
RFQ checklist for avocado import facilities
State each item for the receiving, storage or ripening facility you are procuring. Values come from you or your postharvest adviser.
- CommodityCultivar (for example Hass), maturity at arrival, size counts.
- OriginSupplying countries and how fruit arrives (truck, reefer, controlled atmosphere).
- DestinationFacility location and the markets or retailers it serves.

How to request comparable quotes
- Complete the checklist and state the number and size of ripening rooms.
- Separate holding rooms, ripening rooms and dock equipment in the scope.

Frequently asked questions
At what temperature should avocados be stored?
UC Davis gives 5–13 °C for mature-green avocados depending on cultivar and duration, and 2–4 °C for ripe fruit, with 90–95% relative humidity. Its storage table lists 3–7 °C for Fuerte and Hass. Agree the set point with a postharvest specialist.
Can avocados share a room with other fruit?
Only with care. Avocados produce ethylene and are sensitive to it and to chilling, so mixed rooms and loads can cause early ripening or injury.
Does ColdMatch import or ripen avocados?
No. ColdMatch does not import, transport or ripen fruit. It helps buyers procure storage and ripening infrastructure.
Why do some defects appear only after ripening?
Chilling injury and some internal disorders show after the fruit softens, which is why arrival and ripening-room records matter for claims.
